Phase one of the South Beach Diet is difficult, and you need to be creative with recipes. Traditional lasagna recipes are full of fat and carbohydrates. But by making some substitutions, you can retain the flavors of lasagna without the extra calories and carbs. Add this to my Recipe Box.
Instructions

Preheat your oven to 350 degrees Fahrenheit.
2Boil or steam the cauliflower until slightly soft. Drain it and pour it into a baking pan or casserole.
3Add the tomatoes, ricotta cheese and half of the grated mozzarella. Mix all together. Season with salt and pepper; add a teaspoon or two of Italian seasoning if you like.
4Sprinkle the top with the remaining mozzarella.
5Bake at 350 degrees Fahrenheit until the cheese begins to bubble and is lightly browned.
